Healthy Banana Muffins with Coconut and Cashews

With breaking in a new normal… I was able to focus on baking some amazing things with my kids. We made muffins with cashews and toasted coconut chips…it was delicious! I hope you love them with your family too.

Banana Muffins

1/3 cup chocolate chips

2/3 cashew bits

1/3 toasted coconut chips

2 teaspoon baking soda

1/2 teaspoon of salt

1/2 cup of coconut oil

2 cups of bread flour

2/3 cup of sugar

3 teaspoons vanilla

4 eggs

4 mashed bananas

Bake at 375 for 18 to 20 minutes and then cool.

Spray muffin pan with coconut oil— place silo cone muffin pan on baking sheet center rack. 1/3 cup muffin batter in each one.

Makes 22 muffins 

We created a recipe with ingredients I love but some of my kids wouldn’t eat on their own like coconut and cashews. The large quantity of eggs adds extra protein and the four ripe bananas encourage no food waste. You can get the exact flour, coconut , and cashews from Azure that we used.

Muffins are one of my own personal favorite breakfast hacks, because you can make a large batch and freeze half. Serve with scrambled eggs to carry the breakfast farther while adding protein to keep your family fuller longer.

Most people have seen the books, heard the interviews, or read the articles. I’ve had the privilege of seeing the sacrifice, discipline, faith, and heart behind all of it. She’s poured herself into every page, every broadcast, and every conversation over the last six years.

This may be the closing of one chapter, but it’s also the beginning of one that matters just as much.

Four books. Countless lives impacted. And still the same humble woman who never needed the spotlight to know her purpose.
