There’s something that makes the family feel special when gathering the family for our weekly, fancy* breakfast, especially when it’s both delicious and effortless. This week, I tried a hack that I’m excited to share with you: Sheet Pan Pancakes! Perfect for busy mornings or feeding a crowd, this recipe has already become a family favorite in our house.

*Fancy in our house means an upgrade from cereal. Something hot and homemade, even it is simple!

Why Sheet Pan Pancakes?

Instead of standing over the griddle flipping pancakes one by one, this method lets you bake them all at once. Less time cooking means more time enjoying breakfast with your loved ones.

The Recipe

Ingredients:

  • 5 cups pancake mix (one regular-sized box)
  • 2 ½ cups milk
  • 5 large eggs
  • 2 cups of toppings (blueberries, strawberries, mini chocolate chips—or mix and match!)

Directions:

  1. Preheat and Prep: Preheat your oven to 425°F. Grease a large sheet pan (approximately 18″x13″) or line it with parchment paper for easy cleanup.
  2. Mix the Batter: Place the pancake mix, milk, and eggs in a KitchenAid or similar stand mixer. Mix on medium speed until smooth. Let the batter sit for 5 minutes to thicken slightly and raise.
  3. Pour and Spread: Pour the batter onto the prepared sheet pan and spread it evenly with a spatula.
  4. Add Toppings: Sprinkle your favorite toppings evenly over the batter. You can make fun patterns or divide the pan into sections for different flavors.
  5. Bake: Place the sheet pan in the oven and bake for 15 minutes, or until the pancakes are golden brown and a toothpick inserted into the center comes out clean.
  6. Slice and Serve: Let the pancakes cool slightly before slicing into squares. Serve with butter, syrup, or additional fresh fruit.
